中國、香港、日本的美食自給 | am730

日前本來想寫「美食自給」,誰知卻寫了「糧食自給」,唯有今天續寫。

甚麼是「美食自給」?就是在一個城市,或一個國家,有著全球不同的主要菜系,想吃甚麼菜都應有盡有。

幾年前,新冠疫情蔓延,人人縛在本土,誰也走不得。幾年後的今天,由於種種政治事件,我很擔心歐洲爆發內亂,也可能被伊斯蘭極端分子發動恐怖襲擊,要去歐洲旅行,我也不大敢。

因此,我對朋友講出了心裡話:「其實只要我能在日本和內地,終我一生不能去其他地方旅行,我也已心滿意足了。」

為甚麼我堅持要去日本呢?皆因日本就是世上最能做到「美食自主」的國家:無論甚麼地方的一流菜色,都可在日本吃到。而且,日本還有自主種植的西方食材,水準不在西方之下。

當然,這並非代表日本甚麼餐廳都有,有一些非常特色的,不可能全都有吧?例如英國我最喜歡的餐廳叫「St John」,吃內臟、吃大塊肉,幾不可能在外國複製,但日本大約有齊一流的法國、意大利,甚至是西班牙餐廳,也有很好的中國菜,如「家全七福」,已經算是全世界「美食自主」程度高的地方了。

也因如此,東京永遠是美食家的朝聖之地,香港的幾個著名美食家,如little meg siu meg、盧恬兒、謝嫣薇,以及我的好朋友洪先生,有哪一個不是整天往日本/東京跑?我甚至有幾個朋友,索性住在東京,不吃米芝蓮了,專門找無名小店,吃得非常快活。

事實上,東京是世上最多米芝蓮餐廳的城市,原因之一,是它的人口足有1,400萬人,人口多,自然好餐廳也多。另一原因,是它維持了「匠人精神」,有很多只有幾個位子的高級小店,堅持維持美食的傳統。

至於在香港,美食餐廳也不小,就是吃虧在體量太少、租金太貴。不過在近年來,已多出了omakase,以及高級天婦羅,填補了一些空白,只是水準仍有待改善。但是,一流的麻辣火鍋,仍然欠奉。

我最期望的,就是中國和香港在可見的未來,可有「美食自給」,那我就不心思思去日本了。
