As U.S. restaurant operators continue to navigate persistent labor inflation, volatile food costs, and ongoing staffing challenges, technology providers are sharpening their focus on tools that promise measurable operational gains. One of the latest companies to expand into the market is Nory, a London-based restaurant management platform positioning itself as an AI-native operating system for hospitality businesses.

Founded in 2021 by hospitality entrepreneur Conor Sheridan, co-founder of Irish restaurant group Mad Egg, Nory combines workforce management, inventory, procurement, business intelligence, and financial reporting into a single platform. The company recently announced a $37 million Series B funding round led by Kinnevik, bringing total funding to approximately $63 million, and has opened a U.S. headquarters in New York as part of its expansion strategy. Sheridan will relocate to lead the American operation.

The timing reflects the pressures facing restaurant operators. Industry data over the past two years has consistently shown that a significant majority of operators report higher labor and food costs, while many continue to struggle with recruitment and retention. Surveys have also indicated that a sizable portion of restaurants are operating at or below break-even levels. Nory’s platform uses historical sales and operational data to generate forecasts and recommendations intended to help operators make more informed decisions about staffing levels, purchasing and day-to-day performance. The company says customers typically see labor savings in the range of 8 to 20 percent and food waste reductions of up to 50 percent, along with improvements in administrative efficiency. It also reports that automation features can reduce back-office workload by more than 100 hours per site each month, though outcomes will vary by concept and execution.

In the United States, Nory is launching with several customers, including Black Sheep Coffee, Roasting Plant Coffee, With Love, Always, and Singas Pizza under OM Hospitality, with a broader rollout planned later this year. The company has previously worked with brands in the UK and Ireland, including Dave’s Hot Chicken UK & Ireland, Jamie Oliver Group, Boston Tea Party, and Azzurri Group.

The competitive landscape in restaurant operations technology is increasingly crowded. Workforce management providers such as 7shifts focus heavily on scheduling and labor compliance. POS-centric platforms and enterprise systems from companies like Toast, Square, NCR Voyix, and others have expanded into inventory and reporting. Olo concentrates on digital ordering and guest engagement, while newer entrants are layering AI capabilities across forecasting, procurement, and customer analytics. At the same time, large restaurant groups, including Yum Brands, have invested in proprietary AI tools to assist managers with scheduling, ordering, and operational decision-making.

Nory’s positioning as an integrated, AI-driven operations platform places it somewhere between specialized point solutions and broader enterprise suites. Its success in the U.S. market will likely depend on how well it integrates with existing POS and payroll systems, how quickly operators see measurable returns, and how it differentiates itself from established vendors that are also incorporating machine learning into their products.

For operators, the appeal of AI is becoming less about novelty and more about practical outcomes. Tools that can reliably improve forecasting accuracy, reduce waste, and optimize labor without adding complexity are drawing attention. As cost pressures remain elevated, platforms that can translate data into actionable recommendations may find a receptive audience. Whether Nory can replicate its UK momentum in the U.S. will become clearer as more multi-unit operators adopt and evaluate the system over the coming year.
