SPOKANE, WA., October 10 /EmpoweringSites.com/ – Only 1 in 8 Americans is achieving optimal metabolic health, which means almost 300 million people are on the brink of major chronic health conditions, according to researchers at the University of North Carolina at Chapel Hill’s Gillings School of Global Public Health.
“While metabolic health is affected by a number of different factors, food and nutrition are the main drivers,” states Dr. Randall Hansen, adding: “These chronic illnesses, which are now the leading cause of death, are mostly preventable and sometimes reversible.”
The consumption of ultra-processed foods (UPFs) in the U.S. is at an all-time high, with more than 50 percent of daily calories consumed being sourced from UPFs, which began appearing in the 1980s. These UPFs have been shown to increase risks for multiple chronic health conditions, including obesity, diabetes, stroke, heart disease, and cancer, according to a report from BYU’s Ballard Center for Social Impact.
Furthermore, a study that analyzed the diets of more than 9,000 participants of all ages found that as intake of ultra-processed foods went up, intake of key nutrients (such as fiber, vitamins A and D, and calcium) went drastically down.
UPFs are manufactured foods that strip away so-called unhealthy fats and fiber while adding enormous amounts of sugar, seed oils, and untested chemicals (used for flavoring and color, as well as stabilizers, emulsifiers, and preservatives). The vast majority of grocery staples are UPFs, as are most fast foods and takeout. Researchers from Northeastern University’s Network Science Institute report that three-quarters of the United States food supply can be classified as ultra-processed.
Hansen, the author of the new book, The Healing Revolution Diet: A Science-based Approach to Heal Your Gut, Reverse Chronic Illnesses, Lose Weight, Clear Your Mind, and Increase Longevity, stresses the importance of putting a much greater focus on health and food as medicine.
“Several centuries ago, Hippocrates, the father of modern medicine, stated ‘all disease begins in the gut,’ and current science is finally proving that our gut microbiome plays an essential role in health; and I can tell you that your gut does not like sugar and UPFs,” Hansen stated.
Hansen’s book takes a new perspective on farming, diet and health, and food, making the case that a number of critical errors have led us to this place, including:
• The industrialization of farming, which led to both the development of massive monoculture crops (corn, soybean, wheat) that are subsidized by the government, as well as large produce farms focused purely on crop yield, applying copious amounts of chemicals to spur growth and keep weeds to a minimum. Small farmers and ranchers have been hurt the most by this trend.
• Decades of misinformation and misunderstanding about the roles of fat, sugar, and salt in human nutrition, leading to the wrong focus on fat as the villain and giving sugar a pass. Because of these factors, Americans now consume an average of 120+ pounds of sugar annually.
• Starting in the 1980s and continuing today, the food industry completely changed the composition of most foods, converting them into extremely profitable UPFs.
Some recommendations Hansen makes in the book include:
• Making a greater effort of buying local, supporting farmers and ranchers in the community.
• Considering growing at least some of your own food.
• Cooking more from scratch, using real ingredients.
• Limiting the consumption of fast foods, frozen dinners, and prepacked meals, most of which are classified as UPFs.
• Reducing refined sugar as much as possible.
• Adding more daily fiber.
• Focusing more on nutrient-dense foods.
• Ending a focus on restrictive fad diets, while finding the right healthy foods.
