With the current national focus on healthy diet, we thought it was time to focus on the healthy aspects of Chinese recipes. We have many recipes on My Chinese Home Kitchen, and more than 50 of them are healthy, low-carb dishes. With a couple exceptions, most are not deep-fried or heavily reliant on oil. Those that do use some oil in the wok can be made with heart healthy olive oil. So, we are happy to introduce our new series focusing on low-carb Chinese recipes.
The COVID ordeal has triggered a new awareness of the generally poor health of Americans. A growing number of doctors and experts are pointing to metabolism as the cause of many chronic, inflammatory diseases, such as type II diabetes, various food allergies, intestinal disorders, fatty liver disease, and many more. One presidential candidate, Robert F. Kennedy, Jr. even centered his campaign on the theme “Make America Healthy Again.”
Much of the talk is about the food pyramid adopted in the early 1990s, which pushes lots of ultra-processed foods loaded with empty carbohydrates and seed oils. Twenty years ago, the Atkins Diet introduced the idea of low-carbohydrate diets focused on protein, natural fats, and certain vegetables. This was widely criticized by the experts who worshiped the food pyramid. Now, many doctors, including my own, are recommending low-carbohydrate diets. Today, have Paleo, Keto, Keto-Mediterranean (aka low-carb Mediterranean) all focused on losing weight, reducing blood cholesterol and blood glucose.
Introducing authentic low-carb Chinese food
American Chinese takeout food has long been a guilty pleasure: high in fats from seed oils, loaded with carbohydrates, etc. With few exceptions, like Kung Pao Chicken, most of these dishes are not truly authentic Chinese recipes, and are seldom found in the Chinese home. Authentic Chinese home dishes tend to be much healthier, with lean proteins, little oil, and healthy vegetables full of vitamins and fiber.
