Casual Fine Dining Meets Elevated Portuguese Cuisine
In Portuguese culture, food is placed in the centre of the mesa (“table” in Portuguese) for everyone to enjoy together. Mesa encourages this spirit of sharing, inviting guests to gather around and experience the joy of community and connection over a delicious meal. Helmed by Head Chef Herlander Fernandes, guests will embark on a sensory journey that blends authentic Portuguese flavour with modern culinary techniques.
Noteworthy signature dishes include the Codfish à Brás with Explosive Olives (one of Chef José Avillez’s personal favourites), Shellfish Rice with Caviar, Beetroot Tartare with Mustard Seed Emulsion and Pine Nut Milk, and the King Crab on Cristal Bread. For those with a sweet tooth, the Three Little Pigs is a fun and nostalgic ice cream sandwich shaped like a pig! Its sweet and savoury flavour profile pays homage to Portuguese desserts that use pork.

An Immersive Dining Experience
Mesa by José Avillez effortlessly blends East and West with its stylish interior design, creating a smooth transition from the bar to the dining area. Each table is adorned with a pair of magpies. In Portuguese culture, the magpie symbolises curiosity and resourcefulness, while in Chinese culture, it represents unity and celebration. Together, the inclusion of the magpie motif, along with the stunning LED ceiling animation at the restaurant, create a cultural bridge between China and Portugal.
But it’s not just the atmosphere that stands out. Every staff member is well-versed in the culinary philosophy and the stories behind each dish, ensuring a top-notch experience that goes beyond food — it’s about offering exceptional service to create a memorable dining journey for every guest.
The Reimagined Mesa Bar Experience
The newly designed Mesa Bar enhances this dining experience, featuring expertly crafted cocktails by Resort Master Mixologist Frederick Ma. His creations are designed to complement the storytelling inherent in each dish, offering a harmonious blend of Portuguese and Macau-inspired flavours.
Don’t miss the culinary delight that is Mesa. Reserve your table today for an unforgettable dining adventure!
