Spy X was established last year by Portuguese company Spy Manor as an ‘ultra-luxury’ vodka.

Conceptualised in Portugal, it is distilled and bottled in Poland.

Integration within fine dining is seen as ‘strategic expansion’ for the brand in the luxury market where consumers look for spirits that are designed for mindful sipping rather than high-volume consumption.

Located in the city’s Tsim Sha Tsui neighbourhood, Aqua Hong Kong combines Italian and Japanese influences in its culinary offer and panoramic skyline views from its rooftop setting.

It is part of the Aqua Restaurant Group, which also has high-end establishments in London, Paris, New York, Miami and Dubai.

On bringing the brand into the beverage programme, Alex Bellafronte, chief operating officer of Aqua Restaurant Group said: “At Aqua, we design experiences that transcend borders – connecting cultures from Hong Kong to London, New York, and the Middle East. As our global presence grows, our beverage philosophy remains rooted in craftsmanship, precision, and a deep respect for spirits that enrich every dining moment.”

“Spy X naturally aligns with this vision,” he added. “Its heritage spelt base, refined texture, and remarkable clarity embody the same sense of purpose and artistry that define our cuisine and the atmospheres we create worldwide.”

Through its spelt-led distillation and distinctive bottle design, Spy X is looking to establish itself selectively across leading global luxury hospitality destinations, which aqua Hong Kong falls under.

Bellafronte continued: “We’re also seeing an increasing appreciation for spirits crafted for mindful enjoyment – much like the world’s finest Tequilas – and Spy X stands confidently in that elevated space, resonating with today’s discerning, globally minded luxury audience.”

Spy X debuted in Hong Kong in November.

Earlier this month, the brand partnered with The Whisky Brokers Associates to launch in the UK as part of its continued international expansion.
